Makes 2 servings

1 1/2 cups low moisture Mozzarella cheese, shredded1 tbs of Knox unflavored gelatin1/3 cup waterOptional seasonings: 1 tsp Italian seasoning or Rosemary seasoning.

You start by mixing the gelatin in boiling water.

Then you add the shredded cheese and seasonings, if using.

Then you lay the melted cheese out on parchment paper and wait for it to fully set and cool. Then you use a pizza cutter to cut the noodles like this:

Be sure to save the tops of the parmesan cheese containers because you can reuse them. They fit perfectly on a mason jar! LOOK!

Tips To Make The Best Keto Noodles

  • Use more boiling water than youd use for traditional pasta or spaghetti. This ensures these ones dont stick together and clump up.
  • Drop the noodles into the water and mix slowly and carefully for 30 seconds. After that, cook your noodles to your desired texture. I prefer slightly al dente pasta, so only cooked mine for around 30 seconds.
  • You must rinse your pasta after cooking with cold water. This does not cool down the pasta, but rather helps them avoid sticking together.
  • Ensure whichever pasta sauce you are using is already warm once the pasta is cooked. The more time the cooked pasta has to sit, the wetter it will become.

Is It Better To Slow Cook Or Pressure Cook

Slow cookers are much better for cooking root vegetables and tough cuts of meat because the long, low-temperature cooking process is great for adding moisture and breaking down fat. Do I Have To Use Xanthan Gum?

If you do not have this baking sheet, you can use an ordinary baking sheet covered with parchment paper or a Silicone Sheet without edges.

If youre using parchment paper you have to work fast as the mixture will moist the parchment paper and will be difficult to spread evenly.

Depending on the size or the amount of mixture, use one or two baking sheets. Make sure the mixture is spread as thin as possible.

Place into the oven for eight minutes at 160 Celsius or 320 Fahrenheit.

  • Cream cheese- Opt for using cream cheese from a block instead of a tub, as it has a thicker texture and no added water in it.

  • Parmesan cheese- Use finely grated parmesan cheese or fresh parmesan cheese. Some supermarkets sell a powdered version, which wont work well, and will leave the noodles gritty.
  • Eggs- room temperature eggs. If youd this recipe to be egg-free, try using one of these egg substitutes.

If you would rather use veggie noodles yourself, then rest assured, all of the options that I mentioned above slot in perfectly with this keto pasta carbonara.

No flour is used in this recipe, which is what makes it gluten and grain-free.

I have incorporated dairy though in the form of cream cheese to help with binding, but if youre dairy-free here is a fantastic low-carb keto pasta recipe I found online and have tried and tested myself! I am dairy-free, but I havent been able to find a really good dairy-free substitute to cream cheese from the store as of yet, so I will sometimes splurge and buy a biodynamic, organic cream cheese .

This pasta goes perfectly well with any pasta sauce recipes like pesto, pink sauce, or a tomato-y Neapolitan sauce.

Using room temperature eggs helps stop the pasta from tasting of egg, and also opting for a cream cheese that is more firm and contains less moisture will help prevent the pasta breaking apart when cooked. If you use a cream cheese that is really soft, add a little more psyllium husk powder as needed to firm up the mixture.

Psyllium husk powder acts as the gluten in this recipe, and will help to bind and hold the pasta together.
