Keto Chili Recipe | Easy Low Carb NO BEAN Chili For The Keto Diet

Beans are just a type of plant seed, and people have been eating them for about as long as we’ve been cooking. From lima beans, to black beans, to green beans, it would be difficult to find people in the modern world who haven’t eaten their fair share of beans.

They all contain good amounts of soluble fiber, carbohydrates, protein, folate, and iron, and due to their macronutrient content, many people believe that beans should have a place in anyone’s diet. They’re also extremely cheap and keep you full due to their high protein content.

Are Chili Beans Keto Friendly

Most types of beans such as red kidney beans, black beans, and pinto beans should be avoided on a standard ketogenic diet due to their high carbohydrate content. Most cooked beans contain about 12 grams of net carbs per 3 oz. .

There are some exceptions such as green beans and black soybeans that only contain about 2 grams of net carbs per 3 oz. . If you tolerate more carbs, feel free to add any beans of your choice.

Other potential substitutes for beans might include chopped zucchini or mushrooms, both of which provide additional texture with a very subtle flavor.

Can I Make This Low Carb Chili Recipe In A Crock

Yes, of course! This chili is great in the slow cooker too.

I love my crockpot for dishes like this. This chili recipe works perfectly in the slow cooker for days you know youll have a good 8 hours away from the kitchen. Nothing better than coming home tired and hungry and having an on-plan hot meal waiting for you.

To make this easy low carb chili in the crockpot, you will need to saute the garlic, peppers, and onions in with the ground beefbefore adding them to the slow cooker. Once thats done though, you just toss everything into the crockpot for 8 hours on low.

If at the end of the 8 hours, your chili is still too liquidy, you can remove the lid and let it simmer for another 30 minutes to an hour to help the liquid cook out.

Tools Used To Make Low

  • Non-Stick Skillet A good non-stick skillet is a must for any kitchen. For this particular recipe, it makes cooking and cleanup a breeze. If you dont have a non-stick skillet or if yours is getting some age on it and isnt working well, theres no time like the present to get one!
  • Meat Chopper A meat chopper is an odd-looking tool that can make breaking apart ground meat or sausage a breeze. The tool isnt very big and will easily fit in your kitchen utensil drawer. If you dont have a meat chopper and are constantly aggravated by breaking meat apart, its time to get one!
  • Slow Cooker As you might have figured out by now, a slow-cooker is a necessary component of this recipe. A good slow-cooker can make your life so much easier by making meals ahead of time and cutting out a lot of cooking mess! Less work is always a checkmark in our book!

A Few Potential Risks From Eating Beans

  • Phytates. Beans store phosphorus as phytic acid. Phytates can interfere with your body’s ability to absorb essential minerals such as iron, zinc, manganese, and calcium, although it’s argued that the health benefits of healthy foods often outweigh any anti-nutrient detriments.
  • Lectins. Found in high levels in beans, lectins function as a natural pesticide to protect plants from harmful organisms. Lectins can bind to your intestinal wall and exacerbate symptoms of leaky gut syndrome.
  • Protease inhibitors. These are compounds that block your body’s protein-digesting enzyme, protease. Over time, this can also increase the chances of leaky gut.

Note: The reason why people are so careful about soaking raw beans before cooking them is to reduce some of these harmful components. Cooking them correctly will help prevent you from consuming any of these harmful ingredients listed above.

What Is The Ketogenic Diet

The ketogenic diet is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, thats when you hit ketosis.

While on the Keto diet youre supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. Youre supposed to avoid all grains, legumes, root vegetables, fruit, and sugar.

A Note About Modified Keto Diets

The only time high-carb beans are acceptable on keto is if you are following a cyclical or targeted ketogenic diet .

With these approaches, you’re allowed to have some carbs during specific time periods to allow your body to restore its glycogen stores for optimized athletic performance and increased muscle building.

Consume beans on keto only if:

  • You are following a cyclical ketogenic diet. This is when you have higher carb days one or two times out of the week. Athletes and people who want to build muscle can benefit from high-carb beans like black and pinto beans during their carb-ups.
  • You choose the low-carb beans listed above. Low-carb beans can be consumed in small amounts during your standard ketogenic diet. If you are adamant about eating beans, try to time them around your workout so your body can burn through the extra carbs for energy.

What Kind Of Soybeans Should You Use In Your Chili

You can go with the canned black soybeans that are ready to rock right out of the can.

Or, you can save a little money and buy the dried soybeans. Groceries are really expensive in the High Rocky Mountains so I do this.

I put a cup in my Foodi-pro and pressure cook them for about 20-25 minutes. At a lower altitude they may only need to be cooked for 15-20 minutes in a pressure cooker or insta-pot.

And, if you have picky kids who hate beans…they may like these. My teen prefers soybeans to the pinto or kidney beans in the more traditional chili recipe. She says its a texture thing but I find the textures quite similar.

I guess you’ll need to judge this for yourself.

Most people love their beans in the chili because thats the traditional way to make this recipe. The idea of not including beans might seem strange to you.

The ingredient list might seem long but half of them are spices, so no worries this is still a very easy to make weeknight meal.

    • Ground Beef you can use any ground beef you like, but I recommend 85% lean beef for the best flavor and browning.
    • Low carb vegetables such as onion, celery, garlic, red pepper.
    • Olive Oil While any oil can be used, a flavored oil is recommended, such as olive oil. It complements the tomato-based ingredients nicely.
    • Onion and Garlic-my favorite aromatics. Chopped yellow or white onions are the best.
    • Crushed Tomatoes and Tomato Paste this adds a delicious tomato flavor and makes it stew-like.
    • Seasonings chili powder, ground cumin, bay leaves, oregano.

How To Make This Low Carb Chili Recipes:

Were going to start by browning some ground beef with onion and bell pepper. This is a super hearty chili and we like lots of beef here!

Once the meat is browned, youll add in some minced jalapeno and garlic. The jalapeno doesnt make this too spicy, but it does give it a nice little kick of flavor. Feel free to adjust to your own tastes.

Season things up with some chili powder, cumin, and salt.

Tomato products can be pretty high in carbs, so rather than using tomato sauce like I would in my traditional chili recipe, Im using tomato paste and beef broth. Trust methis is going to be good.

Youll also stir in a can of diced tomatoes.

Simmer your chili for as youd likethe longer it cooks the more flavorful it gets and the more tender the beef gets.

I like to let it simmer for a couple of hours over really low heat but Ive also served this after just a 20 minute. Its delicious either way!

We top our chili with freshly grated cheddar and a dollop of sour cream.
