    Sugar Free Cheesecake Ingredients

    The recipe calls for cream cheese, yogurt, pure vanilla extract, sweetener of choice, almond flour or almond meal, and optional lemon juice.

    Be sure to use full fat cream cheese. For vegan keto cheesecake, choose a plant based cream cheese. I have not tried substituting low fat light cream cheese or Neufchâtel cheese so cannot personally recommend those.

    Regular, dairy free, or Greek yogurt all work. If using vanilla yogurt, omit the vanilla extract in the recipe. You can also experiment with flavored yogurts such as strawberry, raspberry, blueberry, or peach!

    Pretty much any all purpose sweetener is fine, including erythritol or xylitol for a sugar free dessert. Regular sugar, pure maple syrup, and coconut sugar also all work in the recipe. It wont be ketogenic but will still have much less sugar and fewer calories than traditional cheesecakes, while tasting just as delicious.

    How To Make Keto Cheesecake Fluff

    For this recipe, I used heavy cream, softened cream cheese, lemon zest, and low carb sweetener.

    I used my stand mixer to get the heavy cream whipped to stiff peaks. Then, I scraped it into a separate bowl and set it aside. You could also whip this by hand with a whisk or use a hand mixer.

    I then beat the softened cream cheese, lemon zest, and the sweetener until it was nice and smooth.

    It is important to start with soft cream cheese. If it isn’t soft enough, your cheesecake fluff will be lumpy.

    I poured the whipped cream into the stand mixer bowl with the cream cheese and I gently folded it with a spatula to get it half way incorporated. Then used the stand mixer with the whisk and I beat the mixture until it was completely smooth. Now we have keto cheesecake fluff!

    I scraped it all into a piping bag to get it into the glasses nice and pretty. This is totally optional, but it does make it nice if you were serving the keto fluff to guests.

    • Line the pan with parchment paper, otherwise the cheesecake will stick to the removable ring and could break along the edges when you release it from the base. To remove the parchment paper, peel it away from the sides of the cheesecake. The paper on the bottom will also make it really easy to transfer the entire cake to a serving platter or cake stand.
    • Don’t over-mix the cheesecake batter. This applies to after you add the eggs. Make sure to scrape down the edges of the bowl with a rubber spatula occasionally to ensure all of the cream cheese is incorporated and there are no lumps in the batter.

    This keto cheesecake is made with many dairy products, but luckily, there are options to make a dairy-free vegan keto cheesecake. The best is to replace:

    • Cream cheese with vegan cream cheese.
    • Sour cream with peanut butter or vegan sour cream.
    • Heavy cream with canned coconut cream. Make sure to refrigerate two cans of coconut cream the day before making the cheesecake. Then, open the cans carefully, dont shake them, scoop out the top layer, and reserve it in a bowl. Finally, whip into a stiff coconut whipped cream.
    • Butter replace with melted coconut oil.

    Absolutely! Freeze the entire cheesecake uncut or carefully wrap and freeze individual slices for great portion control and a future treat.     Here’s a quick look at how to make sugar-free cheesecake :

  • Line the pan. Grease the springform pan, then line it with pieces of parchment paper. I cut out a circle for the base and strips that fit along the edges. This will allow for easy removal.
  • Make the crust. In a pan on the stovetop, toast the almond flour until it turns golden brown. Combine the toasted flour with the sweetener, butter, cinnamon, salt and vanilla, then press it into the bottom of the springform pan and make the crust base. Bake at 350°F for 8-10 minutes.
  • Make the low-carb cheesecake filling. With an electric hand mixer and a large bowl , beat the cream cheese and powdered sweetener until well combined. Add the vanilla and mix, then scrape down the bowl. Drop in one egg at a time, mixing a few seconds after each is added and scraping the bowl well before each mix. .
  • Bake cheesecake. Pour the filling into the cake pan, then bake the cheesecake at 225°F for 1 hour 45 minutes to 2 hours. It’s done when the edges appear set but the center of the cheesecake still jiggles. Remove from the oven and let the cheesecake cool for 1 hour. It will continue to bake internally. In fact, 1 oz of regular cream cheese contains 1.6g net carbs. One of the so-called no carb cheesecake recipes that I found contained five *bricks* of cream cheese and at 8oz each, the whole cheesecake already contains 64g net carbohydrates before you add anything else!
