Is Chicken Salad Healthy

Unfortunately, the traditional chicken salad recipe is drenched in mayonnaise, which results in an abundance of calories, saturated fat, and cholesterol. In moderation, mayonnaise is not so bad, but since the serving size for mayo is so low, the calories add up fast. For instance, one tablespoon of regular mayonnaise contains 90 calories and 10 grams of fat. And how many tablespoons of mayo do you think end up going into your single scoop of chicken salad? Probably close to 4 or 5! That is almost 500 calories and 50 grams of fat in JUST mayonnaise!

I know that must sound disappointing, but luckily there is a solution! You can lighten up your chicken salad, tuna salad, or whichever salad you create by swapping out mayonnaise for non-fat Greek yogurt and/or light sour cream. These are great replacements because they have very similar textures to mayonnaise, but without all of the added calories and fat.

How To Store Homemade Salad Dressing

I recommend storing your homemade dressing in a glass container in the refrigerator. I like to use mason jars! One thing to note: homemade dressings made with olive oil tend to harden and separate when stored in the fridge. This is completely normal! Take the dressing out of the fridge about 20 minutes before using so it can come to room temperature and then give it a quick shake to recombine the ingredients.

How To Make This Greek Yogurt Ranch Dressing

While I am a fan of blending dressings with a blender, immersion blender or mini-prep food processor, we loved the more rustic texture of the ranch dressing when it was whisked together by hand.

Simply combine all the ingredients in a bowl and whisk them until they are completely combined. Make sure that if you are using granulated sugar that they are dissolved and that the buttermilk powder is not clumpy.

  • BALSAMIC VINEGAR: Substitute white vinegar, apple cider vinegar, or red vinegar. I do not use the most expensive balsamic vinegar for this dressing. I save that for occasions where the balsamic can shine on its own.
  • LIGHT SOY SAUCE: In place of light soy sauce, use coconut aminos or regular soy sauce. Skip the salt called for in the recipe if you go with regular soy sauce.
  • DIJON MUSTARD: Mustard adds umami to this recipe. Substitute your favorite type of mustard.
  • HONEY: Maple syrup makes a flavorful substitute.
  • GREEK YOGURT: The calorie count of this recipe is based on fat-free yogurt, but use your favorite type or whatever you have on hand. If you only have regular yogurt, that will work, too. However, the consistency will be a little thinner.
  • OLIVE OIL: My first choice is extra-virgin olive oil. But any oil you have on hand is acceptable as long as its fresh. Thats important for the best flavor.
  • SALT: The soy sauce has some salt to taste the dressing before adding any salt to see if you want more.

Incidentally, a serving of salad dressing is usually two tablespoons. Going overboard is easy. Whenever Im being obsessive and measuring it out well, two tablespoons is rarely enough. Just sayin.
